Egyptian rice

Oryza sativa

IN ARABIC أرزّ مصريّ

Medium-grain rice; its leached amylose is what glues maqluba's layers into one mass.

ABOUT

Egyptian rice is Oryza sativa in its medium-grain form, and Palestinian Maqluba is the one recipe here that uses it, 500 g for six servings. The rice is rinsed until the water runs mostly clear, drained, and tossed with 1 g of turmeric and a spoon of the Levantine 7-Spice Mix. It goes in last, spread in an even layer over the lamb and the fried vegetables, with 900 ml of reserved lamb broth poured in to sit just above it. After 25 to 30 minutes covered, the pot comes off the heat for 10 to 15 minutes, undisturbed, so the rice sets, and then it is flipped.

The Journal's note on maqluba's origins explains why the grain matters. As starch gelatinises, granules swell and amylose leaches out to coat every grain. A 2025 profiling of Egyptian cultivars put their amylose at about 18 to 23 per cent, and it predicted cooking time with a correlation of 0.93. Low-amylose rices cook soft and cohesive; high-amylose rices set firmer, because amylose chains form stable double helices as rice cools. The note reads the rule of resting the pot as letting that network set, and admits nobody has tested the rest as a variable. The lamb broth carries gelatin: collagen begins to denature between 53 and 63 degrees and becomes gelatin above that. It carries the spices too: allspice, the backbone of the seven-spice, is two-thirds eugenol by volatile content.
