Lamb "Guanciale-Style" Cure

cured lamb, the pork-free heart of a carbonara

A plain salt-and-pepper dry cure that turns fatty lamb brisket into the pork-free answer to guanciale: firm, deeply savoury, and just funky enough to carry a carbonara. Nothing but salt, pepper, and patience. Four or five days in the fridge, then a day or two air-drying, and you have the rich, cured bite the international kitchen leans on, made without the pork.

Method

Cure: Pat the brisket dry, mix the salt and pepper, and rub it evenly over every surface.

Cure: Wrap tightly, or seal in a bag, and refrigerate, flipping it once or twice a day so it cures evenly.

Dry: Unwrap, rinse briefly under cold water, and pat completely dry.
