black peppercorns
Piper nigrum
IN ARABIC حبّات الفلفل الأسود
The pungent king of spice.

ABOUT
A black peppercorn is a drupe, botany's word for a fruit with one hardened wall closed around a single seed, the same construction as a plum, an olive, or a coffee cherry, just dried whole rather than kept fleshy. Piper nigrum's dried, unripe fruit goes into nine recipes here: five main dishes and four spice mixes, and nearly all of them want it ground or toasted fresh rather than poured from a jar of pre-ground dust. Carbonara calls itself a pepper dish in its own recipe notes and takes a heavy three grams, cracked coarsely into the eggs and cheese and cracked again at the table; the cured lamb "guanciale" leans on two and a half ground grams as the only seasoning beside salt. Jameed-Free Mansaf and Abo Shalhoob each take a rounded teaspoon, three grams and two point three, and the molokhiya chicken dish uses a lighter two grams, ground to taste. The four spice mixes all toast whole peppercorns in a dry pan before grinding: three corns in the fish rub, four in the rice blend, a teaspoon's worth by weight in the curry powder, and a full two parts, eight grams, in the seven-spice mix.
Pepper's own compounds split the work between smell and burn. Beta-caryophyllene supplies the peppery, warm-woody note pepper shares with cardamom and cloves, while piperine, an alkaloid amide of about 285 grams per mole (C₁₇H₁₉NO₃), supplies the heat, and that has nothing to do with the nose. Piperine activates TRPV1, the same ion channel capsaicin uses to signal burning heat, though at the human receptor it needs roughly a hundred times capsaicin's concentration to do it; at saturation it produces about twice capsaicin's response and lets go of the receptor in around ten seconds against capsaicin's twenty, which maps onto a cook's instinct that pepper's heat is broader and shorter-lived than chili's. One recipe note calls it exactly that: a quiet warmth that seasons the meat from within rather than shouting over it, whether the dose is a background two grams or carbonara's assertive three.
What survives digestion is a claim more famous than the study behind it. A 1998 trial gave curcumin with and without twenty milligrams of piperine and found bioavailability rose about 154 percent in rats and roughly twentyfold in the human volunteers who took it. It is one small study, published nearly thirty years ago, and one of its co-authoring institutions sells a piperine extract built for exactly this use; a twentyfold rise from a starting point of almost nothing is still not very much curcumin actually absorbed. Grinding pepper over a curry is good cooking regardless of what it does to the turmeric in it. It is not a delivery system, and nobody has replicated the number since.
