What Rome actually paid for pepper

A customs document in Vienna, a complaint from Pliny, and one alkaloid that hits the same nerve receptor as chilli. Also: pepper was never worth its weight in gold.

What Rome actually paid for pepper

Black pepper is a vine from the Western Ghats, the wet mountain spine running down India's southwest coast. Phylogenetic work on the genus Piper puts its arrival in peninsular India tens of millions of years ago, colonising from Southeast Asia in waves, with the Ghats becoming the centre of its diversity. 1 Everything that follows, every empire that bent itself out of shape over this plant, is downstream of one damp forest.

One scrap of papyrus, one ship

The best evidence for the scale of the Roman pepper trade is a single sheet of papyrus in Vienna. Catalogued as P.Vindob. G 40822 and usually called the Muziris papyrus, it is a mid-second-century document written on both sides: a loan contract on one face, a customs settlement on the other, covering a cargo carried from the Malabar coast on a ship named the Hermapollon. The goods were mostly pepper, with nard and ivory alongside, and the assessment ran to something over eleven hundred talents, which was the base for Rome's twenty-five per cent import duty. 2

One ship. One tax form. It has become one of the most-cited documents in ancient economic history precisely because it is so mundane: not a chronicle of the spice trade, just the paperwork.

Pliny the Elder, writing in the first century, was unimpressed by the whole business. He reckoned that in no year does India absorb less than fifty million sesterces of the empire's wealth, sending back goods sold at a hundred times their cost. 3 On pepper specifically he was close to exasperated, noting that it has nothing to recommend it in either fruit or berry, and that its only pleasing quality is pungency, and that we go all the way to India to get this. 4 He also complained that pepper and ginger grow wild in their own countries and are nevertheless bought by weight like gold or silver, which is the earliest version of a line people still repeat.

The line about gold

It is worth stopping on that, because the modern form of it is simply wrong. Pepper was never literally worth its weight in gold. The food historian Michael Krondl put a number on it: in early fifteenth-century Venice, at pepper's all-time price peak, a pound of gold still bought more than three hundred pounds of pepper. Expensive, certainly. Three hundred to one is not parity.

The other favourite claim, that pepper worked as currency, gets the medieval evidence backwards. Peppercorn rent was a real English legal device and survives as a term of art today, but the entire point of it was that a peppercorn is a token, a nominal payment standing in for real consideration so a tenancy could be formalised without money changing hands. It is evidence that pepper was recognisable and countable, not that it was money.

What is genuinely striking sits in a different register. When the Senate negotiated with Alaric outside the walls of Rome in 408, the ransom they agreed to included five thousand pounds of gold, thirty thousand of silver, four thousand silk robes, three thousand dyed skins, and three thousand pounds of pepper. 5 Zosimus records the terms, not a receipt, so treat it as what was agreed rather than what was delivered. Still: a dried berry from a mountain forest in India, itemised on the same page as the bullion.

Why it burns

Pepper's heat comes from piperine, C₁₇H₁₉NO₃, an alkaloid amide of about 285 grams per mole. 9 The mechanism is the genuinely surprising part. Piperine activates TRPV1, the same ion channel capsaicin uses, which is the receptor that also reports actual burning heat. Pepper and chilli, botanically unrelated and separated by an ocean, arrived at the same molecular target.

They do not arrive on equal terms. Measured at the human receptor, piperine's half-maximal concentration is around 38 micromolar against capsaicin's 0.29, so it is roughly a hundred times less potent. But at saturation it produces about twice capsaicin's maximal response, and it desensitises the receptor faster, with a half-time near ten seconds where capsaicin runs beyond twenty. 6 That maps onto something every cook knows without knowing why: chilli heat is sharper and lingers, pepper heat is broad and lets go.

Why the old jar tastes dull

Leave pepper in the light and it turns on itself. Piperine photoisomerises into isopiperine, chavicine, and isochavicine, geometric isomers that are far less pungent, and the conversion increases with light intensity and exposure until it reaches a steady state. 7 A jar on a sunny shelf is slowly disarming.

That is only half the story of stale pepper, and the smaller half. Piperine is a stable, barely volatile molecule. What actually escapes from pre-ground pepper is the terpene fraction, the pinene and limonene and the rest, which carries the fresh, resinous, almost citrus top note. So old ground pepper keeps most of its bite and loses its perfume. It tastes flat and hot rather than bright and hot. This is a well-understood consensus in flavour chemistry rather than a finding I can pin to one definitive paper, so take it as the best available explanation rather than a settled measurement.

The famous number, in context

You will have seen the claim that pepper boosts curcumin absorption by two thousand per cent. It is real, and it traces to one paper: a 1998 pharmacokinetic study that gave curcumin with and without twenty milligrams of piperine, finding a 154 per cent increase in bioavailability in rats and about a twenty-fold increase in human volunteers. 8

Worth reading past the headline, though. It is a single small study, published nearly thirty years ago, and one of its co-authoring institutions manufactures a commercial piperine extract sold for exactly this purpose. None of that makes it wrong. It does mean the number is doing more work in supplement marketing than the evidence base behind it can comfortably carry. The finding deserves replication more than it deserves repetition.

What survives all of this is the mill on the table. A vine from one wet mountain range, a molecule that fools a heat receptor, and a habit expensive enough that Pliny thought we had lost our minds. He was not entirely wrong, and we did it anyway.
