Ghee stands in for butter, melted with raw sugar for a faint caramel and a subtle nutty richness that keeps the crumb dense and moist. They're deliberately less sweet than most brownies, which lets the unsweetened cocoa read as genuinely dark and chocolatey rather than candied. Mix without overworking, and pull them while the centre is still a little underbaked, when a few moist crumbs on the toothpick is exactly right. INGREDIENTS - 100 g ghee (melted)
- 60 g raw sugar (raw)
- 60 g ground raw sugar (raw sugar, ground fine)
- 14 g ground flaxseed (ground; ≈ 2 tbsp)
- 90 ml filtered water (6 tbsp, for the flax egg)
- 60 g cocoa powder (unsweetened)
- 65 g all-purpose flour (all-purpose)
- 1.3 g sea salt (≈ 1/4 tsp)
- 1.2 g baking powder (≈ 1/4 tsp)
- 20 ml fresh milk (or water; optional, if the batter is too thick)
Method - Flax egg: Stir the ground flaxseed into the water and let it sit until thick and gel-like. (10–15 min)
- Melt: Melt the ghee over low heat, stir in the raw sugar for a minute or two, then take it off the heat, stir in the ground sugar, and let it cool a couple of minutes. (~5 min)
- Wet: Whisk the flax egg (and the vanilla extract, if using) into the cooled ghee and sugar until smooth.
- Dry: Add the cocoa, flour, salt, and baking powder and mix until just combined; loosen with a splash of milk or water if the batter is too thick.
- Bake: Pour into a greased or parchment-lined small pan and bake at 175°C / 350°F until a toothpick comes out with a few moist crumbs. (18–24 min · 175°C)
- Cool: Let the brownies cool completely in the pan before slicing.
