filtered water

ABOUT
Filtered water is listed by 33 recipes, 25 of them in the Herbal Teas kitchen. The amounts run from 5 ml of distilled water in the vanilla extract to 1,500 ml of warm water in the tamarind drink. Low Tide boils its 600 ml before the ginger, fennel, licorice, jujube and cardamom go in, then keeps a bare simmer for ten minutes with the lid on. The Turkish coffee takes 70 ml, cold, measured in the cup you will drink from.
The Journal's note on tea scum starts with the film on a mug of black tea in a hard-water town, which most people blame on limescale. Michael Spiro and Deogratius Jaganyi showed it is not. The film is amorphous, where calcite gives a diffraction pattern, and it is 3 per cent calcium by weight, rising to 7 as it ages. The rest is an organic polymer from the tea. It needs calcium or magnesium and bicarbonate together, and it needs air: nitrogen over the cup inhibited it, oxygen increased it. It grows with surface area rather than volume, so a wide mug scums more than a tall one. A slice of lemon greatly decreases it, and two cubes of sugar significantly reduce it, an effect the authors left unexplained.
Hardness and alkalinity, the note stresses, are different numbers: hardness counts calcium and magnesium, alkalinity counts buffering, mostly from bicarbonate. A 2021 study of green tea at five hardness levels found total catechin yield fell and the infusions browned as hardness rose, driven by the alkaline condition. Pure water is no answer either. A 2019 study found purified water could double the EGCG, among the more bitter and astringent things in the leaf. The Specialty Coffee Association of America's coffee water standards, a calcium hardness target of 68 in 2009 and a band of 50 to 175 now, have never permitted zero.
