- 60 g all-purpose flour (all-purpose)
- 20 g oats (blended to a fine flour)
- 30 g whey protein (unflavoured)
- 4.6 g baking powder (≈ 1 tsp)
- 18 g raw sugar (raw; 1–2 tbsp, to taste)
- 0.5 g monk fruit extract (to taste)
- 160 ml fresh milk (plus a splash more if it thickens)
- 15 g ghee (melted: ghee (best), light olive oil, or grapeseed)
- 1.3 g cinnamon stick (≈ 1/2 tsp)
- 0.5 g green cardamom (≈ 1/4 tsp; optional)
- 0.5 g sea salt (a pinch)
Method - Oat flour: Blend the oats to a fine flour.
- Dry: Whisk the flour, oat flour, whey, baking powder, sugar, monk fruit, cinnamon, cardamom, and salt together in a bowl.
- Wet: In a second bowl, whisk the egg, milk, melted fat, and a teaspoon of vanilla extract; the alcohol-free glycerin one below is ideal.
- Combine: Pour the wet into the dry and mix until just combined; don't overwork it.
- Rest: Let the batter rest so the oats and whey hydrate; if it thickens too much, loosen with a splash of milk. (5–10 min)
- Cook: Cook in a preheated waffle iron until deeply golden and crisp. (per your iron)
