Waffles built to carry real protein without turning to cardboard: oat flour and all-purpose flour for a tender crumb, a scoop of whey and a whole egg for the protein, and just enough baking powder to keep them light. A little real sugar (even alongside the monk fruit) is the trick, because it browns and crisps the outside the way a zero-calorie sweetener alone can't. Vanilla (the homemade alcohol-free extract below), cinnamon, and a whisper of cardamom carry the flavour, while the melted fat you choose sets the tone: ghee for richness, light olive oil for balance, grapeseed to stay neutral. Makes four waffles, two servings. The one rule from the cook: don't add more whey without more liquid, or they dry out.
